Here goes, the dumbest question ever...Leather Smell.
Trust me, asking this question puts me in so many groups that I don't want to think about it; ricer, cheesy, lame and "poser" all come to mind.
Some of you may know that I am in a very slow process of wrapping my plastic with imitation leather vinyl. If you don't, you do now!
An observation that most of us have made is that when you get into a new car like a Cadillac, BMW, or the ilk, one of the first impressions is that on top of the new car smell, it smells like leather. Obviously, wrapping my interior in vinyl won't achieve this.
Well, I've delayed long enough. Here is the concept: *deep breath* Purchase a small high quality treated hide/scrap of leather and cut it into small pieces (around 2" square). Place those pieces just under the surface in a few areas like under the dash pad, in the A-pillars, under the console, etc. - mostly in places that would get hot from the sun, so even under the headliner. So, would give the wrap a "feel" of legitimacy, or just make the interior smell like dead cow?

I don't think the small amounts of leather would make a difference. When you think of the large amounts of leather in the cars you named, a few patches won't achieve nearly the same smell.
I'm sure they make some kind of air freshener that smells like leather though.

Those small pieces won't be noticeable especially not if they are under the vinyl. An alternative that might work better is a leather cleaner/conditioner that has a leather smell. SCJ mentioned Zaino. I've never used that but I have used Meguiar's leather cleaner/conditioner (I forget which one) and it does have a leather smell. Whichever you use, the smell won't last long.

If your willing to splurge man , and you still run the stock Trans Am seats, step up and just order front leather seat covers from leatherseats.com (?) I think the peices might give you a hint of a leather smell , but I dont think it achieve what your hoping . Guess its worth a try though .

I guess I'll have to do a good enough job with the interior to let it speak for its self.

My wife drug me into the New Yankee Candle one day and I had to look around while she smelled EVERY FREAKING CANDLE in the store and found car freshener called leather. It comes in the typical cardboard one you hang from your mirror and this little gel thing you put under your seats. People always tell me my interior smells like new when they get in. Not bad for a 12 year old car.

Wow, seriously thanks folks.
