Default Best way to refinish interior pannels anyone know???

Hey guys I would like to refinish my interior pannels as they have a few scratches and rub marks as you get over the years. I am in the process of wanting to go from my gray interior to a ebony (black) interior and I think it looks a lot better, not so cheap. What is the best way to go about this and is it possable to switch the dash to black or would it be easier ti find a black one maybe out of a Trans Am? Lets hear your thoughts?
