What pads to get?
I bought my 06 and it had UUC crossdrilled and slotted rotors and hawk dustless pads. I was a little disappointed...I thought these big brakes would work better.
Then I drove my buddies 04 with stock pads and it was waaayyy better.
So should I go back to stock pads with the UUC rotors or is there a good aftermarket/performance pad out there?

It probably has HPS pads, apparently they don't offer the same braking performance as stock pads. You'll experience more brake dust with stock pads. You could go with HP+ pads, supposed to be better braking performance and similar dust levels as stock pads. I am still on stock pads right now.
I have a set of new HP+ front pads for sale in the classifieds. Add is a little old now, but it's still there.

I have HPS and dont mind them. I like the low brake dust, my wheels and calipers always look perfect.
My V is my daily driver, never seen a track and probably never will under my ownership. For daily driving and the occasional freeway runs the HPS pads and slotted rotors work perfectly. IMO

Anyway, I just changed my fronts to Hawk HPS's and I definitely agree that they don't have even close to the 'bite' that the stock Brembo pads have. At first I thought maybe I had burnished them incorrectly and messed 'em up, but I know I burnished them correctly. They just don't grab like the Brembo's.

And you might wanna check ebay, just type in the part number of the pads you want. I got the HP+ for $85 shipped. They were only labeled as pads for the rear of a ford GT, but the part number was right....Also some guy is selling oem takeoff rotors for dirt cheap, got both fronts for $120 shipped.
