If you take away the factory computer, what will control the VVT?

The VVT cam will assume a "default" position without ECM control. This position (wherever it is) will most likely NOT be ideal for a carb or any other induction system. I'd drop the $350 or so to change it out. Along with another $750 for a cam, springs, and pushrods if you can afford it.

Sorry I never posted again yesterday, but that was my point was that if the factory ECU isn't there you will never reach the full potential of that valvetrain with the VVT places still in place..
So swap it out for a custom ground cam and you will be better off!

LS2 cam gear (match it to your cam selection 1 or 3 bolt), LS2 cover , 12588670 dampner to replace the stock tensioner. Arp cam bolt or bolts.

Although the factory VVT cam is far from ideal with the VVT in default, it WILL still run. Hell, most guys here are running cams that are less than ideal for their situation. As per Stunningman, If you're on a budget just buy the single-bolt 4x upper gear and the non-VVT front cover (with the cam sensor hole). You can find the covers on the 'Bay for $30 minus sensor and harness or $80 complete. The little harness will make it easier and is worth the extra $$$.
