has anyone used one of these units? says it lets you use the stock gauge and pcm from a single temp sensor...

That's jusr a jumper harness for a 3 wire temp sender, you could just get the 3 wire sender and pig tail and do the same for less.

The 3 wire CTS uses the same connector as a TPS or AC high pressure switch. You may have the AC connector laying around from rebuilding the harness, if not nearly any GM car 90+ will have the proper TPS pigtail. Snip, solder, drive

Pinout
A BLK CTS low ref
B YEL CTS signal
C Dk GRN Coolant gauge
