Speedway motors sells adapters.

The oil sender adapter is 1/8" NPT and will work for mechanical or electric gauges.
The temp adapter was too smal. I tapped the brass drivers side block plug for the 1/2" NPT sender on my 68 vette.

Like Gary said you use the stock senders from the GTO and adapt them to the LS block with the various adapters.

I was going to do the same thing on a 6.0 LY6 motor. Curious, is the temp at the block plug reasonably close to what the ECM reports?

Ha, I was worried about that too. It's as accurate as a 40 year old gauge can read. It does read the same as the ecu and another analog gauge I mounted in the passenger head.
The one odd thing though is that on warm up it takes a little longer for the needle to rise, but then rises faster. Not sure if that's just the gauge or something to do with the location.
