how much power do you plan on making & at what elevation are you?
7-8psi will typically max out the MAF at around ~1k elevation...sometimes more, sometimes less.
10psi+ will def. max out the MAF; however, there are other ways besides going to a 2-3bar MAP system after you max out the MAF....its all in the tune, however you can only compensate so much in the particular tables to equate to your AFR you need once maxing out the MAF.
IAT sensor...yes, its a good idea.

well my motor has a stock bottom end and i plan to do a mild turbo cam if it will benefit me. will it? i dont plan on going to crazy on the boost level. i was told a safe boost level on the stock bottom end was around 6-8 psi, is this true? what is a 2 bar map and where do i get it? do you think i need it with 500-550 rwhp.

just stick with the 1 bar map sensor, go for 6psi and leave it alone, trust me....personal experience. ALSO, please purchase tr7 ngk plug, as you are exceeding the factory engine HP by 150, NGK recommends the tr7(for in excess of 100HP added) plug to keep cylinder temps down as otherwise they would get hotter than normal and cause fatigue and wear.
do a custom grind cam from a pro (such as Patrick G. up here)...i had mine specified from him and I'm very happy with it.
LS1 pistons & rods are not good for much. the crank & block is said to be good for 800.
