Default using coolant temp sensor to pull timing

Has anyone used the coolant temp sensor to pull timing while on the 2 step to help spool turbo. I figure I could wire it to short out the sensor while pushing the button to activate my 2step causing it to think the car Is over heating and pull timing out. There is a table called burst knock retard vs. Coolant temp

I wouldn't use the coolant sensor. Wire a short in the IAT sensor so it reads -40 and just set your timing reduction there.
