I got 26mpg once doing 70mph on a trip to florida(all highway). My car is a 1999 z28, stock 3.23, stock trans, only mods are catback, lid, and stock 16" wheels. Big, heavy aftermarket wheels can affect your mileage as well.
I usually get between 20-22mpg, driving 80% highway, 15% stop and go, 5% ***** to the wall

you probably wont see much of an improvement with the gearswap, maybe 2mpg on the hwy max. the problem is city driving is still going to suffer. unless the swap is going to be damn near free, i wouldnt do it.

gears won't affect the mileage too much for street driving, you'd be lucky to see 1-2mpg on highway. I did a test at 65mph on highway then 75mph return trip. Used virtually the same amount of gas. With a gear swap, it's basically 3.73-3.23 is barely 300rpm which doesn't do much mileage wise.
The stall really kills mileage unfortunately, you may be able to find a better more efficient stall instead with perhaps an earlier lockup specifically geared to extend gas mileage.

your city mileage might actually go down since the stall will have work harder on take off from a light. Like said before, unless the swap is free, stick with what you got. Are gonna save enough gas to justify the swap?

If you already have 3.73's I would keep them. If you get to a point where you are concerned about the price of gas you should get a second car as a beater.
