Default Water pump

Will it hurt a used water pump to sit out of a car for a few months?

Like could the seals or o rings dry up at all.

Anywhere really. Any vendor's water pump gaskets will do the job. I'm sure ebay has some too. The dealership, or a local auto store even.

I would think it would be ok, I mean they sit on the shelf for sometimes years at a time. How many miles you have? Maybe you should just invest in a new one while you have it off, that way you are good to go in the water pump category for awhile.
