Sell it or Keep it?

Not sure how different the market is over there, but trying to sell it for what it sounds like you want to get out of it might not be easy.
Most people prefer the trans ams which it's getting more common to see for $6-7k and used c5s are getting cheaper constantly. My buddy just picked up a really clean m6 formula with a ws6 hood for a little over half of your above sail panel price. It was a "good" deal for him but he's seen several others sell for similar prices down there in TX.

Just kidding around and exaggerating with that figure.
I do lot of looking, and realize that miracle bargains do sometimes happen out there, but generally $4000-$6000 LS1 cars are rough. And IMO, the market is getting such that nicer cars are starting to hold their value and maybe even bring better money.
As far as Trans Ams vs. Formulas go, I think that's true of WS6's, but not of regular Trans Ams if a Formula is equipped to an equivalent level - T-tops, leather, etc. Then there are those of us who prefer Formulas ...

It's a small group, but you're not alone. I think if I ever bought another Pontiac 4th gen, it would have to be a Formula. Looking back, I've regretted the Trans Am I bought back in 2000, I really should have committed earlier in the year and gone with a WS6 Formula, but it was too late to order one and they weren't offered for 2001. Even still, I probably should have just gone with a regular Formula.
Formulas and Camaros have much cleaner styling that I've grown to prefer over the years.

Don't be afraid of the mileage, fix it and keep it. I bought my current car with 159k on the clock but it was all stock and ran great! Right after buying it, I replaced/upgraded all suspension parts, resealed the entire motor, installed all new sensors (all while doing my heads, cam, stall, LT install), beefed up and rebuilt my 4l60, and finally rebuilt my rear end when I did the gears. Now she drives like new!!

I've found a couple of deals on ultra-low mileage Trans Ams (Formulas are just hard to find). I almost bought one but it sold out from under me while I was trying to figure out transportation from the East Coast.
Then I did some number crunching. Even at a great price of $12,000 for a 15k mile car, by the time I paid for transportation, taxes and fees, and did the necessary mods (e.g. bye-bye 2.73's, converter, shift kit, etc.), even swapping parts from my current car on to the new one, I'm in the $15-16 range - about what I'd get if I sold BOTH my Formulas.
Then there would be the inevitable window motors, headlight motors, and other stuff that has already been done on these cars. I'm not sure I really want to start all over again.
Even though I don't drive the SOM car frequently, between the two of them (@90k & 130K respectively), there are a lot of miles left to go. I'm leaning toward keeping.
