Default LS1 thinks it's running hot

My 98' Trans am shows over 230 degrees according to the gauge. This is after driving 5 miles in 65 degree weather. I have the manual fan bypass switch but full fans has no effect. Checking under the hood, it just doesn't feel that hot. The radiator hoses are warm and i can touch the radiator without getting burned. I swapped coolant about 4 months ago to the green, but used the compatible stuff. I replaced the temperature sensor last weekend but no luck. The car is relatively stock other than basic bolt-ons. Any suggestions would be great. Thanks.

If you going by the heat when you open the hood saying "it don't feel that hot" Then there is a good possibility the thermostat is stuck.
