Next time your temps get really high, like over the 220*F mark.......pull over, leave the engine running and leave the A/C on. Pop the hood and carefully put your hand behind each fan....see if they are BOTH blowing. If so, your fans are working.
This means you most likely have a dirty condenser. It needs to come out and get cleaned on the exterior. You probably have debris of all kinds jammed into the cooling fins from years and years of driving. Have it cleaned at a radiator shop or do it yourself. Or hell, for $100 install a new one.
I suggest going to an A/C shop and have them suck your refrigerant out of the system, then when you get it all back together go back to have them put it back in.
Here's how I learned this. When I cleaned mine the temps were perfect again.

-----BUT......of course, check the fans. If they are not working you're in luck, its probably just the relay(s). You can check them in 3 minutes by using another relay from another fuse position to see if that fixes it.
