Is my Camaro's Temp too high? or Just right?
So I've seen other posts and when they mention temperature some are at 180° however I seem to be around 200° is that too high? I live in Los Angeles, California and it's my daily driver my car is 1999 Z28 with a T56. If it is too high what can I do to correct the issue?

The gauge in your '99 won't provide specifically correct readings. It will show just a hair under 210° for any reading between about 190-235°F. The only way you can narrow it down to a specific temp is with a scanner.
Stock fan settings will allow coolant temps to cycle between 217°-227°F at low speed, and up to 235°F before high speed will engage. Stock t-stat temp is 86°C (187°F), so that's the lowest temp you'd ever see with a stock cooling system after the engine has fully warmed up.

My stock dash gauge reads almost exactly like 13th's does when the PLX Kiwi wifi is telling my iPod's Dash Command app the coolant Temp is ACTUALLY 180*-185*f at the sensor/sending unit (and YES, the stock gauge does not read ANY higher than that even when the app is telling me that the actual temp is 205*-220*F) .
