Default Oil pump goin bad?

My oil gauge has been doin this thing where the guage is very twitchy. It doesn't move smoothly at all. I jerks it's way up to pressure and back down.

I replaced the oil pressure sending unit with my intake swap so I know it's not that. I thought it may just be my gauge cluster cuz my dad's Avalnche's tach did the same thing and it was the gauge cluster.

Could it be my oil pump? Is there a way I could test this?

Run a mechanical gauge, just to check. At least then you know the true reading.

I am in a similar situation when the outside temp is in the 90-100F range. But, my question pertains when changing the pump, does removing the cam gear allow the cam to move, thus changing the degree of the cam in relation to the crank.

More specifically can I remove both the crank and cam gears when switching the old pump out without fear of the cam or crank rotating while the gears are off?
