Default Hooking up thermostat(race water pump)

I am wanting to get a new waterpump and i dont really want to get the street virsion i was wondering how i could hook up a thermostat or just leave it off what will leaving it off do to me?

I have a race pump and have no thermo, I run cooler than I did with the stock pump and a thermo, plus when I turn off the car I can turn on the fans and waterpump and cool my car down in 5 minutes =0) you can also look in jegs they have a setup that uses a temp sensor that turns on the waterpump when the water in the blobk reaches 175?? and turns it off when it reaches 165? so it works kinda like a thermo

i dont want to have any problems about going in to closed loop or anything like that when i do decide to go out and drive it around.
