So I am thinking about deleting both on my 99 camaro before I reinstall the engine. I am running vrx 4 cam and 243 heads,Stock manifold and stock exhaust with cats I all ready had the pcm tuned by frost. Will the delete affect my o2 sensors ? Or does it just turn the SES light on?

AFAIK, just will turn on SES. I yanked it all on my stock SS, and had a friend with TunerCAT just tune out those AIR/EGR codes. No tweak to O2 was done, as far I know - he never mentioned tweaking them.
