Lower coolant temps can reduce pre-ignition allowing you to run more timing without KR (knock retart, PCM pulling timing). They can also help to lower temps in the intake to provide a cooler (more dense) intake air charge.
Some people swear by them even in stock cars. In my expericance, for an N/A car with stock compression and a near stock timing curve, I have seen no gains from using a 160 stat. I just set the fans to run a little cooler with the stock stat for my current LS1.
Remeber, you will need to reprogram your fans for the stat to actually make any real difference at anything other than highway cruising.

I saw nothing from mine. Higher temp (like stock)
aids economy. Stock fans & rad have a hard time
supporting the lower thermostat temp with A/C on
in summer, so any gain will not be entirely consistent
or dependable. I say forget it, put the money toward
something effective.

I bought a 160 t stat a while ago. Decided not to use it, I sold it on here. Basically the way I look at it is if you live in a hot climate year round its a good mod. For me here in Cali I would not really need it. I bought an slp fan switch instead, for traffic and all that. If you do decide on the t stat then you need to reprogram your fans to turn on earlier as well.

I run a 160 stat with the fans reprogrammed and i run at about 185-190 in the hot 90+ degree fl weather with the a/c kicking. Your not going to see any gains from a t-stat period. I prefer to run cooler than hotter but thats just me. If you already have the hpp3 i would spend the $40 for a cooler t-stat and reprogram the fans. Cooler is better.
