what are the pros and cons of each??

stainless will last a very long time.

coated will rust in due time.
the thing about the rust, its not like coated headers will rust threw in a short time.

coated hold in heat much better than stainless and will provide you with a cooler engine bay

plus they're a lot cheaper...

i'd get coated myself but if you live in an area with frequently salted roads, stainless is pretty much your only option. expect stainless headers to outlive your car. coated may not.

^^ Actually, stainless steel holds the heat in better than the coated headers according to some tests that some members have posted up on this site.

I'm sure jet hot coated stainless would be the ultimate, but that would be expensive!
