Arrow Stainless steel

I see some header are made from 304 stainless steel and some are made of 321 stainless which is a higher grade and is one thicker than the other.

I believe 321 is a higher (better) grade of stainless. However I think both QTP and Kooks use 304 so 321 might be overkill, but I'm no expert. Also, thickness is measured in gauge, and the grade of stainless has nothing to do with it.

A limitation with 321 is that titanium does not transfer well across a high temperature arc, so is not recommended as a welding consumable.
