What kind of guage are you using to determine this coolant temperature? Maby the radiator is undersized?

I don't see a transmission coolers listed in your mods. If you're running without one, the higher transmission temperatures could be causing your coolant temps to be too high. Get a good sized transmission cooler, and when you install it bypass the radiator altogether. A stall is going to cause your engine to produce more heat when your driving with the convertor unlocked. (especially up a hill) My son lives up a good sized hill and I can watch my temp gauge climb as I accelerate up it. Also, make sure that your cooling fans are reprogrammed to come on earlier.
