the cats, short for catalytic converters, remove combustable components from the exhaust fumes, as well as cleaning the exhaust, you sho;uldnt really have to ask this if your thinking about taking them out
read on wikipedia what they do, not a smart choice if you care about the environment
they do cut down on noise yes, but you will hear more gurgles and pops as a result of taking them out
read the sticky about www.ls1sounds.com if you wanna know what itll sound like and other catbacks will sound like

cats quiet your car down a lot but they do keep your fumes a lot more friendly. Your exhaust gas will smell like it's from the 70s if u ditch the cats, but it will give you a lot more flow. If you go with a X-pipe setup, your car will sound awesome without cats. If you stay with a Y pipe, your car will sound pretty raspy.

Depends on what CATS you go with. EADperformance has some metallic cats and they actually do less "quieting down" than bullets. And they dont restrict anything up till like 450hp. If u have emissions laws, then go with them, if not then its up to u.
