3" off the headers, into a single 3" I pipe.

would my exhaust sound change any from going 3" pipes off the headers w/ cats to 2.5" pipes with cats with my TRUE DUALS SYSTEM?

Sound change wouldn't be noticeable, and you'd have plenty of flow + more ground clearance. I say go for it!

could a exhaust shop fab a 2.5" pipes and still use my 3" TSP cats?

That's not a bad idea, because you can utilize the flow of 3" cats on a 2.5" system.

All you would need are reducers on either side of each cat, to bring it down from 3" to 2.5". Then you could run 2.5" pipes.

You can get exhaust tubing reducers from summit for pretty cheap, the 3" to 2.5" are pretty slick.

That's a toss up. It's more rare than the actual tubing, so best to get it first and then go there with it.
