I am installing long tubes with an off road pipe and plan on using a Predator to disable the rear 02 sensors. Do I need to physically hook up the rear 02 sensors, or can they be removed an plugs put in the pipes? I assume I have to get extensions for the front 02 sensors, is this correct?

Remove rears. Get extensions or Bosch 13111's for the front.
