EDIT - you don't have your O2's connected, yet? GET THEM ON. they're going to REALLY screw up your PCM. it has no idea what the hell's going on!! you're really, really, really jumping the gun on this one!

your tune is probably really off due to running very rich. how long have you had headers installed for? it may take a few days for the PCM to get used to the much richer air/fuel ratio. in some cases, the PCM won't be able to relearn and you'll have to get a custom dyno tune, or at the very least, a mail-order tune.

With the front O2's disconnected, you'll be in an open loop - fault operation mode. Chances are fueling will be a little lean, but no more than 6~8% off of what's being commanded, which would put you right around 12.7:1 AFR at WOT. There is no learning in open loop. That's why it's called 'open loop' - there's nothing there to close the loop and provide feedback to the PCM. With it being an open loop - fault operation mode, it may be reverting to the low octane timing table. That would be where the lack of power feel is coming from.
Is it detrimental that the car is being driven in open loop? Probably not in the short term due to the safety nets built into the factory tune. But, I wouldn't put off installing some NBO2's any longer than you have to.
