I use a 160, and the car runs mostly in the 180's to low 190's. In the PCM, the stock programming pulls timing starting at 212, so you should target your temps to stay below that.

I say it depends on your internal engine clearances.
If it's on the loose side, then 160*F
If it's real tight, then no thermostat at all.
If it's on the loose side, then 160*F
