Default Engine temp stays 190+ no matter what

Just curious if this is normal...I have Ford Windstar cooling fans that were enough to cool my 350 to 160 or so in a hurry when I turn them both on, but I've found with the ls1 even running down the road at a low rpm cruise with both on in 40 degree weather the temp won't go lower than 190 and usually hangs around 194

Just want to know if there's anything I should check or maybe the sensor is a "dummy" type that just reads cold, warm, and hot or something. Engine is a 98 but sensor and harness are for a 2000

I think 98's had real sensors/gages. Later years are all a "dummy" gage. It always reads the same once it is up to temp unless it gets pretty hot.

It'll help but it will still creep up with AC on or just get hot in 95*= temps. Better flowing pump or better fans is what I think I need to look at. Big radiator and 160* t-stat helped but did not cure my problem

Stock thermostat? If so, 190* is normal.

the stock thermostat is insane. I had 207 degrees all the time with the stocker. I changed for a 160 thermostat and it never sees 180 unless pushing it. I can't run a mid-engined car that will see track time with normal temps at 207.
