Basically, will the 243 heads off a 2006 gto, bolt right up in place of 2001 z28 heads

Yes.... Mill them a little bit or run a thinner head gaskets for an extra bump in compression.

If you're keeping the stock cam, springs will be OK. But, change the springs if you go with a better cam. Also, change the pushrods no matter what. Stockers suck and might already be bent. Cheap insurance....
