I think 6500 is safe and does not significantly shorten the life of an LS1 shortblock. I think 7000 is doable but I would urge my friends to pull that shortblock out within two years to upgrade the rod bolts.

Yup, 7000 can last for a while, but you're going to have some problems. You're definitely in the danger zone and some day a component will likely fail. (as PSJ stated, most likely the rod bolts)

I feel very confident with my daily driver limiter set at 6850 and shifting at 6750....but that's me. This is an opinionated question with alot of luck thrown in. If I had a cam that would turn 7200 I wouldn't be scared to set the shift points there and the limiter at 7300. But would I tell someone else that it's a good idea for an engine that is expected to last? Absolutely NOT! If it's an engine that you want to last a loooooong long time then keep it below 6600 or so.
