Some of your questions have many answers. it will help if you can give a little more info

What kinda block are you doing this to? Not all builds are equal or right for your intentions.

1st question what's your goal? What do you want track only, street, dd?

You can build a track monster but can't drive it to work.

Other questions are budget & ability.

How much you are willing to spend?

Can you do the work? have the tools & knowledge?

Answer these and you'll start getting some suggestions.

I didn't ask for suggestions. I asked for a parts list. The parts I'm asking about are really just gaskets and tools, not expensive

You will also need a puller for the balancer and a set of metric line wrenches. I would replace all gaskets on all of the mating surfaces of every part you remove. Gaskets are cheap and you don't want to spend all that time just to have to tear it back down because of a leak somewhere. You will also need a valve spring compression tool to compress the springs to remove old retainers. Replace the belts and hoses while you are in there. LS1howto.com has lots of useful information about bolt locations and torque specs for the tear down and reassemble. FWIW when reinstalling the balancer, clean the balancer and put it in the over at 300* for about 15 min. Get it nice and warm and it will help with getting it back on the crank without too much trouble. Do not use your new balancer bolt for the install you will risk stripping the threads on the crank and then you will be fucked like a tied goat. Good luck with the install.

Good idea with heating the balancer. I know not to use the bolt to pull it on.

What gasket kit do I need? I already bought water pump gaskets.

Since I already had head gaskets, I bought the cam install gasket/bolt kit from Texas Speed. Has everything you need.

Really? Why don't the 'How To's' or gasket kits include any of these?

why replace half the stuff when you already have it all torn down, easier to replace it all at the same time so no questions asked.

Definitely get new lifter trays. Don't forget antifreeze, oil, and oil filter.

Yep, I have all that stuff on the list. It was more the gaskets I'm questioning.
Cam Retainer Plate Bolts?
Throttle Body Gasket?
Valley Cover Gasket?
Knock Sensor Grommet?
Intake Manifold Gasket Set?
Head Alignment Dowels?
Head Steam Vent Gaskets?
Valve cover gaskets?

It just doesn't seem like most people replace all these and I'd rather not replace parts I don't have to.

What timing set should I go with? An LS2 or a comp double roller?

All of those things are reuseable. Why would you take the valley cover off?

agree with the knock sensors. also, you can lay down a bead of rtv silicone around the knock sensor plugs so that water cannot get down and damage the sensors. I had to remove my intake to repair those damn things!
