Anyone know what size bolt (length, size, thread pitch) I need for the windage tray in an LS1? Im assembling my motor and just realized that I dont have any bolts.

The tray sits on top of the main studs, you just need nuts for the studs.

OEM windage tray nuts are M8x1.25. ARP fasteners are M10x2.0.

Make sure you order locking nuts with mechanical locking not nylon ring locking.
