Default I'm guessing thermostat.

I was driving in traffic today and all of a sudden my temp went from 210 to red line. I watched it for like 3 minutes and was about to pull over when it started to go back down. It ran normal after that. Then later in the day it jumped back up again. I don't know if it was just me or that the fans came on late.

Could be a lot of things, do the basics first,check the radiator(not the overflow) for low coolant,thermostats dont usually stick closed and unstick back and forth.

My car was overheating once and one of the fan nuts came off so basically I had only one fan!!

Id try checking your coolant level first.More than likely your thermostat just acted up or your sending unit not working correctly.Thats my guess on how your temp could fluxuate so much so fast.The fans on my car very rare come on even when its 90-100 outside so I dont think its a issue with the fans coming on to late.Try the simple stuff first ,it just might be something simple.
