Question Which LS1 should I shop for

I am planning an LS1 conversion and am starting to shop for motors. My plan is to use a mostly stock motor with a mostly stock auto trans. The car is for street use and weighs roughly 3000 pounds. I may put an aftermarket converter since it will be esay to do during the install. The car will have 3.80 gears with a 29 inch tall tire.

That's the back ground. What year LS1 motor would be the most advantageous to have? I know the 2000 and newer have the LS6 manifold, but that would not be that difficult to add to an older model. Which one would you want if you could pick any of them? All other things being equal. Why would be nice to know also.

I have read two of the books on the market about the motors, but it is difficult to pick out if there is a single most desirable unit. Thanks for considering my rookie questions.
