Default Do I have an oil pressure problem?

What is the normal oil pressure supposed to read on LS1 F-bodys at idle, highway speeds, and full throttle? The reason I ask is because tonight I took my car out to fill it up with gas and romped on it when I left the station. Well obviously the oil pressure gauge shot up after that, but it seemed maybe higher than normal. The other day I noticed the gauge was fluctuating at idle, never really noticed it doing that before. It idles a little over 40 psi which seems normal. However, honestly i've never really paid attention to the gauge at highway speeds. At approx 65 mph my gauge was reading a little under 60 psi and somewhat over 60 psi at full throttle. For some reason I thought it should be a little over 40 psi at highway speeds. This seem ok? Are the oil pressure gauges accurate in these cars?
Also we have had extremely hot weather in my area (over 100 degrees), would this affest my car. My car has always had quite a bit of piston slap at startup and In the past i've used 10-30 oil, should a switch?
