what's the point of tipping it like this? I thought the fat part went towards in the intake manifold?

Ok here is my guess.
By hanging the valve vertically the valve is more likely to seat correctly and not leak through.
Gravity will be working axially to the valves moving parts.....as per at right angles originally.
Sure the moving parts are only light but it may make a noticeable difference especially if the valve or spring has been known to "hang-up".
