Tuning issues. You need to find somebody that can tune it for you.

Check the MAF for dirt or oil on the small resistor wires.

Time to have a long talk with the installer. It's surprising your engine is able to idle at 3k to 4k RPM without stalling. That's quite low for a motor to continue to run. I'm not quite sure what you mean when you say: "it catches". That's usually a term I use when I'm talking to my friends about what bait I used when redfishing. "Damn, what bait did you use to get Big Dog into the boat"? "Try the Johnson Spoon. It catches". Apparently when you catch it's not the same thing down here in south Louisiana. When we catch down here it's time to get out the Crisco.

when i say catches, i mean that the powerband kicks in and it runs as if you have wide open throttle.

Since it happens on startup and then pretty much goes away when warm, I'm willing to bet the open loop part of your tune is not calibrated correctly.

It could just be a bad O2 sensor. You need a scan tool to see if all sensors are functioning properly. But it does sound like it is only occuring in closed loop, b/c when you accelerate quickly it is going into open loop and running properly.
