Default ? about block milling and quench

So, I'm going over my setup for my LS1 build and I've come up with a combination that I think will be really good, but of course I have some questions.

Stock bottom end
mill block deck to achieve an out-of-the-whole measurement of .012
stock GM MLS gasket (.055 compressed thickness)
milled 243s .012 to get around 62.5cc chambers
216/216 @.050 with .588/.588 on a 114+2
10.99:1 SCR - 8.66:1 DCR for use on crappy AZ 91 octane

Questions:
1) Will the stock piston be compromised at all by being .012 out of the whole versus the stock .006?
2) I calculated a quench of .043. Is this correct?
3) What is the dimension from the crankshaft centerline to the deck of a stock LS1 so that I can tell the machinist the correct distance?
4) Anybody have a recommendation for a good machine shop in the Phoenix area that can get all this right?
