Here are some pics I took of the LS2 timing chain cover (including gasket) and
the LS2 valley cover.

So the valley cover now extends above the oil pressure sensor and uses that extra bolt?

Does the ls2 cam sensor work on an ls1?

A definite yes to the first question and a "almost positive" yes to the cam sensor question. The only thing I have to do for the cam sensor is to extend the wiring so the sensor fitting can connect.
