Who makes a 4.25 piston?

Any piston manufacturer will make you what you want, but none will stock that size because it won't be used much if at all. It's been somewhat determined that the LSX won't be safe at 4.250", so I can only see big time racers who throw away their blocks after every few passes going that route. It'll be much safer and smarter to stick in the 4.200" range so you can actually use the block again if something were to happen.

This is good advice. If you want to start big and have some material to work with in the future, a 4.187"-4.190" bore is great.You are also wide open with reguards to ring pack selection for this bore size. A little more so than with the 4.200" bore. A 4.250" bore in nearly every case will require figure eight O ring. This is not a problem. However is not the best option for a street application. With the 4.187"-4.200" you are golden with a Cometic MLS gasket.
