Talking l92 conversion valve clearance

I am doing a L92 conversion on a iron ls1 408 that has Lunati flat tops and want to change the cam without have to fly cut the pistons. Does anybody have a rule of thumb on how much lift should be safe ? or maybe some cams people have used ? I plan on claying to be sure but if i can avoid buy more than one cam it will help. Thanks in advance
