widest and biggest wheels i can go with on 2000 LS1 camaro?

I think (I could be wrong though), he means what is the largest size wheel he can put on the car - not tire size for the wheel.
I believe about the largest you can go is around 12" - with the right offset of course. After that you have to mini-tub.
Edit - without hammering. You might be able to get away with 11". Maybe.

Oh lol, well in that case yea you would probably be right, I have 2friends with 17x11 zr1s in the rear, one had to roll the fender but hes lowered and the other one it was fine for. It is a tight fit but 11inch wide would be fine and alot of people run that on here from what I can tell. 12inch as said above, idk about since ive never seen them from anyone I know in person but im sure its a tight fit if we could fit them.

OK, i was thinking of putting 18"X8.5" at front with 255 ZR 35/18 tires
and 18"X12" at rear with 325 ZR 35/18 tires with correct offset and adequate backspacing of course
can i install these wheels and tires with the above sizes in my 2000 LS1 camaro? and what modifications i have to do to my car to fit the above wheels and tires in my car?

You should be fine with those sizes. The front will fit with zero issue and the rear should be OK with a little work. If the car is lowered you will definitely need an adjustable panhard rod, maybe even if it's not. Most likely you will need to roll the rear fender lip and maybe clearance the inside of the wheel well a little.
I have 18x11.5 rear wheels and a 315 tire fits just fine with the fender rolled.

1- what is exactly the fender lip? can provide a picture pionting to the fender and fender lip?
if i'm not mistaking it is the body piece of the car at the wheel place or it is the inside black plastic piece at the wheel place?
2- how to roll the fender lip? is that by a hammer?

Yea, only the rears are 17x11. I kept the 17x9s in the front. When I make a sharp turn the outside wheel rubs against the inner fender wall. I haven't done the BFH mod though.

Here's a picture of the tool used to roll al fender. This tool works much better than a hammer or a bat. The part that the red roller is touching is the fender lip.
The spots you might need to clearance on the inner fender will be noticeable after you install the new wheels and tires. Some spots of the undercoating will be worn away. Hit those spots with a hammer and then spray them with some paint to keep them from rusting.
I don't know what offsets you'll need for the wheels. Where ever you order the wheels from will be able to tell you.

1 - By fender I mean the rear body panel that curves over the wheel. The lip, is the metal strip/lip that sticks out into the wheel well toward the car. If you run your hand along the edge of the fender above the tire you will feel it.
