Default what size shims when porting/shiming a oil pump ?

i have a new oil pump off a new 02 crate motor .. looking to port polish and shim it ..

anyone knw were i can get the shims ..
i would hope i can find a set a local hardware store ..

also how many and what size should i get .

ive already seen the requirements for certain ps1 ..
.121=79psi
.100=75.5
.095=74.6

im thinking the more psi the better right ?

ive already diasembled it , i knw were to portand not i just need the size of the shiims ..
