Default ls6 swap.removing oil sensor unit
How does the oil sensor unit come off,i dont want to break it.

Use a open end wrench on. There is a metal "nut" on the bottom.

its close to impossible to get to without the intake off though.

If you get the socket that fits it, then you can do it with the intake still on. It's still tough though.
