Default Water temp acting funny.

As soon as I started up the car this morning the water temp went up to 180 (which is not bad) but within less than a minute it went up to 210, waited about a minute and then back down to 180 it kept doing this quick fluctuating till I got to work. Had no effect on it wether I was at a light or moving. I dont have a tstat right now but it has been working fine without it, staying at a constant 180, I think the water pump might be about to crap out on me. What do you guys think?

Man i feel like such a dumbass now. I can do heads/cam swap but I cant remember to check the water level.
Waited for the engine to cool down and opened the rad. and sure enough, there was no water to be seen. Filled it up and got home just fine. Thanks though

Happened to me last year. But I knew I had a leaky radiator, just didn't check the coolant level.
