Default Runs Great!....till it warms up

Recently swapped the 2006 5.3 into a 69 firebird. Runs really smooth until it warms up. Once it's at operating temp, it feels like it's trying to catch up when you blip the throttle. It is DBW, and it is a L59 (flex) engine.
Any ideas?

Open to closed loop issues?
Have you done a scan?
What was deleted, etc ??

I actually kept most emission. Other than VATS, and a few codes, I haven't deleted alot. I kept the evap cannister with all three sensors functional (fuel pressure, purge, and evap intake valve). The front clip isn't back on yet, but maybe tomorrow I'll hook HP up and at least drive around the block once. It also smells pig rich, and has lots of condesation dripping from exhaust once I turn it off. ???
