I would like to know how far the extra head bolt bosses
stick out from the side of the block on a LSX Block.

Here you go.. about 7/8". You could say 1" to be safe.

Is this from the flat edge of the head to the most outer point of the boss?

Yes, I put a square on it and measure to the outer lip of the boss on the head
