I was wanting to know if is possible to make that kind of power with a maf?

We do it all of the time in the ford world. You will need to find somebody who can make a maf that will not peg out (frequency) by the airflow that you need to make that power. Then some scaling in the pcm to get around the 512 g/second limitation.

how would you scale it acutely?

cut the injector sizing in half and scale the airflow values in 1/2, you will also need to redo interpolate all of the tables that use grams/second or grams/cyl for the X or Y axis.
