Default Thermostat water pump question

so my water pump started leaking on my 00 ls1 and i got a new bmr water pump on order at advance auto and im thinking of going to a 160 thermostat
my first question is do i need to change the temp sensor when dropping from 195 to 160? next question is with getting a new water pump will it be the new style or will it be the old style like i have?

Sending unit no, you will need to change the settings for when the fans turn on and off

im guessing noway to change the settings with out a tuner?

it will most likely be the new style thermo depending on how long ago the BMR unit was introduced
