Default 11" rims-Grinding down rotor hub for clearance?

I'm thinking of getting some Fikse FM-5's with the 17x11's out back. I like the extra depth in the lip but I don't like how far the rim sticks out. I have only seen them in pics, not in person. In some pics in certain angles they look awesome but some pics especially from the front/side they look like they stick out too far and look redneck. I was wondering if I could have the rotor hub grinded down a 1/3" or so. If not I might just get 17x9.5's all around. What do you guys think?

If you get the right offset, 50mm, you shouldn't have any problem with them sticking out too far. Unless you just don't like having the rim at the edge of the fender well. Most people like this look.
