I have a LS1 on a 69 Camaro. When I idle, my oil pressure drops (to about 25) and my water temp rises (to about 195).
-What is the optimal temp and pressure for this engine?
-Why is fluctuating so much?

it is normal for oil pressure to fluctuate with engine rpm, and it will also fluctuate based on engine temp, specifically the oil temp rather than the coolant temp. If you were to have an oil temp gauge, you would see your oil temp is over 220F in the pan, which is ok, and if it's 5w30 oil then around 25psi at idle is completely normal. If you increase the rpms up around 2000 you should see oil pressure jump immediately up around 40psi. When oil pressure stays 30psi or less over 2000rpm then you have a problem.
normal water/coolant temp is 195F. Oem thermstats have varied over the years for the f-body from 180F to 195F I believe. It'll depend on your radiator and fan setup, but you will see increases in coolant temp at idle (assuming you mean parked and not moving) because no air is passing through the radiator and heat is just building up under the hood. The electric radiator fans on the f-body do not turn on until coolant reaches 226F. In your case if you have electric radiator fans I would set them to turn on at 200F, and run a 180F thermostat, if after that you have temp problems then look at underhood airflow or lack thereof. Air flows through the radiator and removes the heat from the coolant, but that hot air has to go somewhere, preferably from out of the engine bay.

Additionally the owners manual for my LS1 says on a hot day you may see the Oil Pressure drop to as low as 5 psi, and thats normal as long as the pressure increases with revs like "1 FMF" said.
